Before the fire: a calmer grill setup

Five minutes of deliberate preparation can make the cooking feel far less hurried.

Create two landing places

Keep one area for raw ingredients and another for cooked food. Put a clean platter and clean utensils on the serving side before you start. This makes the right choice easier when the food is ready and your attention is divided.

Gather what the method needs

Read the whole recipe and place the tools you will actually use within reach. A suitable thermometer, long tongs and heat-resistant gloves may be more useful than a crowded tray of gadgets. Check that each item is appropriate for your cooker and the temperatures involved.

Prepare the supporting food

Mix the dressing, arrange the salad and organise the bread before the main cook. Keep perishable ingredients chilled until needed. The fewer unfinished tasks competing with the grill, the easier it is to respond when the food needs to move.

Plan the finish

Know where the food will rest, where it will be sliced and who is carrying it to the table. Keep the route clear of guests and pets. After cooking, follow your equipment’s shutdown and cooling instructions. A good setup includes the end of the meal as well as the first flame.
