LET'S COOK
At the fire.
Prepare a clean grate over medium heat. Pat the pineapple dry and brush lightly with oil.
Mix sugar and cinnamon. Sprinkle lightly over the fruit just before cooking.
Grill for about 3–4 minutes per side until marked and warm through. Move to a cooler part of the grill if the sugar darkens too fast.
Finish with lime zest and juice. Serve immediately with coconut yogurt or ice cream.
Use the gentler heat left after your main cook. Dessert does not need a roaring fire.
